Suet is the fat that surrounds the kidneys and organs, and it has a higher concentration of fat-soluble vitamins A, D, E, and K and a richer nutrient profile than fat rendered from other parts of the animal. It's also the closest match to the lipids in human skin, which is why it absorbs so well and supports your skin's natural barrier.
